Okay. I got two packages of cream cheese.
I tried - unsuccessfully - to get sugar free
chocolate graham cracker crumbs.
So I got Voortman chocolate cookies instead.
Got sugar substitutes - no problem there.

What I'm gonna do is make a two-layer thing in a
spring pan.

Bottom layer crust will be mixed with softened
butter. That gets lightly baked - till crunchy.
On top of that will do half of the cream cheese
mixture. This is where I need help.

Mid sequence interrupt -

Just so we all know what we are doing -

Baked chocolate cookie crumb crust on the bottom -
Then layer one of the cream cheese mix -
Then more (unbaked) chocolate cookie crumbs
Then layer Two of the cream cheese mix
Topped off the Duncan Hines/Comstock cherry pie filling.
Duncan Hines bought out Comstock, you know.
Sugarfree of course.

But the cream cheese mix - that is the bugaboo, eh?

Well - I want to add a bit of sugar free instant
pudding mix, and possibly a dash of corn starch to
thicken the mess up a bit.
Then refrigerate until consumed.

Anybody have any ideas / comments? Eh?

Wish you pinged me earlier. My wife has two, but alas she is in the kitchen doing her magic right now. I dare not go for her recipe book:)

One is for a NY cheese cake and one for the summer "no bake" cheese cake. Both keep me going to the gym:)

A. File away the complex (but probably good recipe.)

B. Undertake my 'Step 2' - Simplify and Improvise.

C. Repeat Step 'B' as often as needed until we arrive at
recipes X and Y.

X: Pretty darn good but a reasonable amount of work.

Y: The Quick-E / Laze-E compromise.

Yes was full too and no dessert.

The smoked ham, and large portion of broccoli was quite enough. Of course held off on the starches (mashed potatoes). Trying to better regulate my starches in my latter 40s:) Did have a slice of my wife's homemade bread though:)

I will inquire about the 'no bake' recipe this evening.

the rolls I miss the most. But now I can't eat 'em.

Okay.
I bought a package of Voortman chocolate fudge cookies
to smash up and use the crumbs to make a chocolate crumb
crust for the cheesecake. But - umm - I don't know how
this happened - but apparently I've eaten them. All of them.

I was looking in the trash bag - what is this? Ummm...

I remember looking at the bag of cookies thinking, 'I'll only eat
a couple...'. Umm...

So I've got a bag of Keebler graham craham cracker crumbs, and a
cannister of Hershey's cocoa powder (that I'll mix with the
crumbs).

This will all work. No prob...

Yes.

Buy a Graham cracker crust.

Buy two 8 ounce cream cheese bricks and a tub of Cool Whip

Let the cream cheese get room temp. Put them in large mixing bowl along with the whole tub of Cool whip. A teaspoon of vanilla extract and a cup of sugar. Mix the contents thoroughly.... scoop it all inside the Graham cracker crust. Chill it to set it for a few hours. Pour whatever fruit topping on top.

Enjoy.

Good product. I remember the brand when I grew up, up North.

My German aunt (wife's side) used to have those fancy cookies with her afternoon tea. I think this is the brand.

Sorry to hear that. I know you were hoping to hear my miracle story; let me know if you still want to hear it.

Back on topic. A good boyhood friend of mine had a younger brother. His brother's name was Gene - he was Italian American in NJ. Gene went to the CIA for his schooling. Culinary Institute of America. He found his niche in cheesecakes and had a small factory in the back of his house.

His cheesecakes were popular and he had a regional distribution. He died several years ago of cancer at a young age - young fifty something.

I suppose it won't hurt to mention his company as I think it is still in business. Maddelena's Cheesecake...in NJ.

I think chuck_wagon lives in NJ too. Check it out Chuck!

filling. Comstock was it's own brand/company until D.H.
bought 'em. Luckily D.H. seem to have changed nothing

my good friends to take us all for a ride in
their new Chrysler minivan up to this place so
