It's a clay tile from Mexico. Sealing it makes it turn anywhere from dark orange to yellow. I was just wondering if there is a special sealer or some kind of process to ensure that the end result is darker.

You could try (test) putting paint thinner or even mixed with diesel fuel on it first, to darken the tile. Try it on a spare tile if you have one. Then coat with sealer. Liquid floor wax might even darken it.
