I think someone told me once it is lime coming out of the mortar joints. Like I said I notice this happens when you tuck point or pour in cold weather. There used to be two kinds of chemicals you could add to your mortar that would allow your concrete/mortar to be done down to about 20 degrees. One packet you would often get the white bleeding out. The other packet didn't seem to have that effect. The cheap pack was about a buck and the other one was maybe 2 bucks. It is good for an 80 pound bag of premixed mortar/concrete. The good stuff is called Rapid Set.
Lots of old used brick was made in the era where the stack of brick was unevenly baked and the result was some were not suitable for use in exterior walls and chimneys due to being too 'soft'. They tend to absorb water.

Thanks for the info. I use old brick sometimes. The guys I used to work for were specialists in Restoration work. They used it more often then me. They were big time liberals. I liked them though. One time I was giving one them a ride in my Truck. Rush Limbaugh was on. It was tense. It was in the Clinton Era.
