PARMESAN PORK LOIN Ingredients
1- (2 pound) pork loin
Olive oil
1/4 cup freshly grated Parmesan
2 pounds diced potatoes
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
2-3 cans reduced-sodium chicken broth
Spice rub mix (more spices will be needed for more meat)
2 Tbsp Emeril's Bayou Blast
1 Tbsp Dried sage
1 Tbsp McCormick salt-free garlic and herb seasoning
1 Tsp Black pepper
1 Tsp Salt
Directions
Place potatoes, onion, celery, and carrots in bottom of slow-cooker. Take pork loin and cut in half lengthwise, rub it with spice mix and sear in frying pan in olive oil. Place pork on top of vegetables and top with Parmesan, add chicken broth to about 1/2 way up pork loin. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.

If you have a big slow cooker and more people just double or triple the recipe... You can also substitute pork chops or any other pork for the loin You can substitute shallots or leeks in place of the onions.... Just use your imagination
