Italian Christmas Sausage Ingredients • 1lb Lean ground Pork • 1.5 oz Parmesan, freshly grated • 1 oz Romano, freshly grated • 2 Tbsp Sun Dried tomatoes, minced • 1 Tbsp Fresh Basil, minced • 2 Tsp Fresh Garlic, minced • 1 Tsp Salt • 1/4 Tsp Black pepper Directions Mix all spices and 2 Tbsp of water together to form a slurry, then add meat and mix thoroughly. Basil Pesto Tortellini Soup Ingredients • 1 cup chopped green onions(2 bunches) • 4-15oz cans Chicken Broth • 1 package Cheese Tortellini uncooked fresh or frozen (12-16 ounces) • 8 ounces Baby Portobello Mushrooms - chopped • 1/3 cup Basil Pesto (DeLallo) • ½ Tsp Kosher Salt • Parmesan Cheese freshly grated Directions In a 5 quart saucepan, combine broth, salt and green onions. In order to get the right flavor this mixture must come to a boil. Add mushrooms and cook for 3 minutes then add remaining ingredients and cook long enough that pasta cooks according to directions. Jalapeno Sausage Ingredients • 1 Lb Lean ground pork • 2-3 Pickled Jalapeno, minced, stemmed and seeded (or Serranos) • 3-4 oz Sharp Cheddar Cheese (1/4” and smaller cubes or grated) • 1 Tbsp Onions, minced • 1 Tsp Garlic, minced • 1 Tsp Salt • 1 Tsp Dark brown sugar • 1 Tsp Smoked Spanish Paprika • ½ Tsp Black Pepper • ¼ Tsp Mexican Oregano • 2-3 Tbsp cold water Directions Combine cold water and spices to make a slurry, add meat and mix well, place into a large Ziploc bag and let marinade in refrigerator overnight.
